Mango Raspberry Beet Bliss Smoothie

  • 1 cup mango chunks (fresh or frozen)
  • 1/2 cup raspberries (fresh or frozen)
  • 1 small beet, peeled and grated
  • 1 cup almond milk
  • 2 tablespoons goji berries (soaked in water for 10 minutes)
  • 1 tablespoon chia seeds
  • 1 tablespoon honey or maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup ice cubes (optional)

  1. 1. Start by soaking the goji berries in water for about 10 minutes. This will help soften them and make them easier to blend.
  2. 2. While the goji berries are soaking, peel and grate the beet.
  3. 3. Add the mango chunks, raspberries, grated beet, almond milk, and soaked goji berries (including the soaking water) into a blender.
  4. 4. Add the chia seeds, honey or maple syrup (if using), and vanilla extract to the blender.
  5. 5. Blend on high until smooth and creamy. If you prefer a colder smoothie, add ice cubes and blend again until the ice is completely crushed and incorporated.
  6. 6. Pour the smoothie into a glass and enjoy immediately.
